Having made an initial search of what I have to hand I can add/repeat the following:
The Post Office Directory of 1866 talks about a small chapel on the North side of the church that was 'used as a Vestry', and other Post Office Directories also list entries for the Vestry
A search of the National Archves (cuurently https://discovery.nationalarchives.gov.uk/), does produce some interesting records (taking care not to confuse Hooe in East Sussex with Hooe in Devon).
